Masala Baingan
Ingredients: for 2-3 persons
Eggplants 10-12 small size
Carom seeds 1/2 tsp
Turmeric powder 1 spoon
Garam Masala 1 tsp
Chat masala 1 tsp
Coriander powder 1 spoon
Red Chilli powder 1 tsp
Black salt 1/2 tsp
Ginger powder 1 tsp
Salt to taste
Tomato puree
Oil 2 tbsp
Oil for frying .
Method
Wash eggplants thoroughly and cut each into 4 pieces. Heat oil in pan or Kadhai. fry eggplant properly in hot oil in small batches. After frying all eggplants put them aside on paper towel.
Heat some oil in wok, add carom seeds, when the change colour put tomato puree. When oil separates, add dry spices. Mix and cook well. Add half cup of water and mix well. Then add fried eggplants and salt to taste to masala. Mix well till all eggplants are coated well with masala. Cover with lid and cook on low heat for 4-5 minutes. Serve hot. Relish with Roti or Paratha.
